Cheese sauce is one of the trickier things to do without dairy products. However, we think we’ve cracked it, starting with a roux-based white sauce as a base. This recipe is slightly fiddly, but persevere as the results are well worthwhile. This sauce can be used in virtually any recipe which calls for cheese sauce: it makes a very acceptable lasagne. It also can be prepared in a vegan-safe manner, so all of those creamy cheesy vegetarian dishes are now on the menu.

Ingredients

  • 1oz / 30 g Tomor
  • 2 level tbsps plain flour
  • 3 rounded tsps mustard powder
  • 16 floz / 430 ml unsweetened soya milk
  • 4 floz / 110 ml Soya Dream
  • a little freshly grated nutmeg
  • salt and freshly ground black pepper
  • 95 g / 4 oz finely grated Cheezly
  • 2 heaped tbsps Parmazano

Instructions

  1. Start by melting the tomor in a saucepan which is NOT non-stick.
  2. Take the pan off the heat and allow to cool just a little.
  3. While this cools, mix the milk and cream in a pint jug.
  4. Stir the flour and mustard powder into the melted butter and blend to make a paste. You can use either a wooden spoon or a balloon whisk. Cook for 1 minute on a medium heat, stirring constantly to prevent burning.
  5. Add the milk and cream mixture in very small quantities, blending each addition smoothly before adding any more. Don’t rush this stage or you will have lumps!
  6. If you aren’t already using a whisk, change to one now. Shake the box of Parmazano vigorously before you open it, as it tends to clump and you don’t want to tip it in all lumpy. Whisk in the Parmazano.
  7. Whisking constantly but not over-vigorously, heat the sauce to a gentle simmer. Cook very gently for 5 minutes, whisking all the time. If the sauce starts to go too thick you can add a little more milk.
  8. Add the cheezly and whisk it in. It will melt if you have grated it finely.
  9. Season with salt and pepper, grate a little nutmeg into the sauce.

Quick Notes

Cheese sauce is very much a matter of personal taste. We like to imitate a mature cheddar flavour in our sauces, but if you prefer something with less bite reduce the quantity of mustard powder.
